Radicchio Apple Salad

Ingredients
1 head radicchio
1 medium apple
½ cup mixed nuts
2 tbsp tahini
½ tbsp apple cider vinegar
½ tbsp dijon mustard
½ tsp salt
½ tsp black pepper
2 tbsp nutritional yeast
Method
PREP. Core radicchio and thinly slice into long strips. Core apple and grate or cut into small pieces. Roughly chop mixed nuts, if desired.
MAKE DRESSING. Add tahini, apple cider vinegar, Dijon mustard, salt, pepper, and nutritional yeast to a jar or small bowl. Whisk well to combine. Add water 1 tbsp at a time if needed to reach desired consistency.
SERVE. Place radicchio, apples, and mixed nuts in a large bowl. Drizzle over dressing. Toss to combine.

If you cannot find radicchio, you can use endive or escarole. If none of these are available, use kale but massage with olive oil to soften and reduce bitterness.
Use an apple that is crunchy and sweet so it retains its texture in the salad. I used a honeycrisp.
For the mixed nuts, I used the Trader Joe’s Olive and Herbs Mixed Nuts. Feel free to use your favorite blend of nuts and/or dried fruits.
Wait until serving to dress so that the salad does not get soggy.
